Workin' Lunch: Sushi Inspired Brown Rice Bowl

So you crave sushi for lunch, but hate paying crazy prices? Yeah so do I. Don't get me wrong, I splurge on some veggie rolls from Whole Foods, or some delivery vegetarian sushi, or even a bento box at a restaurant. These aren't the best for day-to-day lunches, so I have devised a few different recipes to create an easy workin' lunch inspired by your favorite asian inspired meals.

This one is based on a spicy tuna roll, broken down into a great brown rice bowl. Keep portions of this one small, because it is quite filling. The crunch of the cabbage and spice are great with the creamy avocado and filling and healthy brown rice. 

Workin' Lunch: Easy Sushi Inspired Brown Rice Bowl



  • 1 cup pre-cooked brown rice
  • 1/4 cup red cabbage chopped
  • 1/4 avocado chopped
  • handful of avocado
  • juice of half a lime
  • 2 tbs greek yogurt
  • 1 tbs sriracha


To make your sriracha yogurt sauce add yogurt, sriracha and juice of half a lime together and mix. Put rice in bowl and micro until warm but not too hot. {Pre-made brown rice is great to bring to work to add to leftovers - I usually have some sort of rice around} 

Add your cold ingredients and drizzle your sauce. Add a bit of extra lime juice for an extra zest if you want. Other things that would be good with this crazy easy lunch include: bell peppers, radishes, shredded chicken (for meat eaters), sprouts or cucumber.
